This may be one of my favorite dessert recipes. I can just imagine someone enjoying an eclair and wondering why something so delicious is a single-serve dessert. Well, you don’t have to wonder anymore! You can bake an entire eclair cake yourself!
This is my friend Sherry’s quick cake recipe. Her easy recipes are always in high demand. Fortunately, she was kind enough to share it with me.

Cooking time: 5 minutes
Total time: 25 minutes plus 8 hours to relax
Servings: Makes 1 cake
Here’s how to do it:
- Line a 13 x 9 inch dish with half of the graham crackers, break cookies to fit as needed.
- Whisk milk and pudding mixes for 2 minutes. Let stand until softened, about 2 minutes. Stir in whipped topping. Spread evenly over crackers.
