It’s not easy to get back to healthy eating after Christmas treats.

Whether you’re starting from scratch or trying to get back on track with a pre-party routine, January can often feel like the hardest time to stick with any type of diet.

However, baked oats are a great way to stay on track while getting your sweet fix — and it looks like Slimming World fans have found a new favorite recipe, reports SurreyLive.

Made with oats, eggs, yogurt, fruit and a drop of vanilla essence, it’s a low fat, low calorie and high fiber option.

It’s no wonder so many people – including many moms – who follow Slimming World rave about it.

Healthy food maker @cakeontherun shared her simple recipe based on Slimming World’s favorite, to create fruity oatmeal cake.

You can cut it into slices and have a serving every day, whether it’s for breakfast, lunch or dessert.

Baked oats recipe (for 5 people)

Ingredients

  • 120 g rolled oatmeal
  • 250 g plain low-fat or vanilla yoghurt
  • Splashes of vanilla essence
  • 3 eggs
  • Plus 4 tablespoons extra yogurt and your choice of fruit to serve

Method

  1. Preheat your oven to 200°C/400°F/gas 6.
  2. Put the oats, yogurt, vanilla and eggs in a large bowl and stir with a spoon until combined.
  3. Line an 8-inch cake pan with parchment paper, pour the mixture into it, and bake for 30 minutes.
  4. Serve with yogurt and fruit.
